INGREDIENTS (PORTION FOR 2)
120g (wholegrain) rice
40g kidney beans
one can tuna (in water)
one cucumber
handful tomatoes
handful spinach
fresh coriander
Dressing: lemon juice, oil, salt and pepper, mustard
PREPARATION
cook the rice
wash the beans, tomatoes, cucumber and the spinach
chop the tomatoes and cucumber all in small pieces
add all the ingredients in a bowl and add your dressing on top

For healthy fats you can add avocado, hard boiled egg or sunflower seeds on top.
