Tuna Salad



INGREDIENTS (PORTION FOR 2)

  • 120g (wholegrain) rice

  • 40g kidney beans

  • one can tuna (in water)

  • one cucumber

  • handful tomatoes

  • handful spinach

  • fresh coriander

  • Dressing: lemon juice, oil, salt and pepper, mustard


PREPARATION

  • cook the rice

  • wash the beans, tomatoes, cucumber and the spinach

  • chop the tomatoes and cucumber all in small pieces

  • add all the ingredients in a bowl and add your dressing on top

NOTES

For healthy fats you can add avocado, hard boiled egg or sunflower seeds on top.

Potatoes or wholegrain bread are also a good fit
