Shakshuka is a breakfast from Isreal made with eggs and tomatoes.
INGREDIENTS (PORTION FOR 2)
1 red onion
1 can chunky tomatoes OR 500g fresh Tomatoes
1/2 red chili
10g olive oil
1 tsp. paprika powder
4 eggs
1/2 bunch of parsley
optional: hummus & bread or rice
PREPARATION
cut the onion and chili in small pieces and add to a hot pan
add the chunky tomatoes and spice it up with salt, pepper and paprika powder
make some space (like little holes) for the eggs in the pan and add them
cover the pan wit a lit and poach the eggs for 5-10 minutes at medium heat
cut the parsley and add on top of the eggs
serve with hummus and bread or rice
