INGREDIENTS (PORTION FOR 2)
100g brown lentils
2 handful tomatoes
1 cucumber
parsley
Dressing: 2-3 tbsp olive oil, salt, pepper, limejuice
Opt.: rice or potatoes as an additional source of carbohydrates
PREPARATION
Boil the lentils according to the package instructions and let them cool down
Chop cucumber, tomatoes and parsley into small pieces
Likewise the parsley
Then mix everything together and add the dressing
