BANANA MUFFINS

A great high carb snack or breakfast option.



INGREDIENTS (PORTION FOR 4 MUFFINS)

  • One banana (about 100g)

  • one egg

  • 25g melted coconut oil

  • 15g coconut flakes

  • 45g flour (wholegrain)

  • 25g oats

  • 5g baking powder


PREPARATION

  • Mash a banana

  • Add in one egg and a sip of milk

  • Add 25g of liquid coconut oil

  • Mix in 15g of coconut flakes

  • Mix 45g wholegrain flour, 25g oats and 5g baking powder in a separate bowl

  • Mix the dry mass into the liquid one until you get a smooth dough

  • Bake in the oven for 15-20 min at 170°.

MACROS (for the one muffin)

175 Calories - 16g Carbs / 5g Protein / 9g Fat


NOTES

Easy to prepare for a snack or a fast breakfast.

You could also go for nuts instead of the coconut flakes, or leave it out if you want to save some fat.

Make sure to use ripe bananas, that will add some more sweetness to the muffins
